The best ingredients for fine dining

The best ingredients for dine dining served in MICHELIN Star Chef restaurants around the world share some similarities. Famous chefs follow food trends and know which versatile ingredients enhance the taste of their dishes.

Ingredients are subject to trends and seasons and fine dining restaurants are always on the lookout for the best tasting products. One year king crab, rhubarb, truffle or beetroot might be the go-to ingredient. Another year it is celeriac, scallops, grapes or veal.

When we look at the menus of our Uqonic Chefs, we see some patterns in terms of common ingredients used. Our MICHELIN Star Chefs love to play with the composition of ingredients to discover new flavours.

Here are the best fine dining ingredients that can be found in our premium dinner boxes:

  • Celeriac: a hearty and starchy vegetable that has a similar structure as a potato. It’s intriguing taste is great in any dish. Try Mauro Colagreco’s Diced Celeriac with Potato, Tapioca and Sudachi.
  • Beetroot: this vegetable has a lot of sides to it. Its sweet, earthiness and umami flavours result in versatile dishes. Try Dominique Crenn’s Beet Chip with Vadouvan Cream.
  • Leek: did you know leeks are related to the union and garlic family? Leeks pair well with creamy sauces, fish, and meat.
  • Lamb: compared to other types of meat such as beef, lamb tastes stronger and earthier. Our chefs have different takes on lamb dishes, but they all elevate this ingredient to new heights. Try Mauro Colagreco’s Lamb Shoulder Confit, Black Garlic Puree, Carrots and Herbs Cracker.
  • Char: this is a richly flavoured type of fish which taste lies between trout and salmon. Char is a versatile type of fish that goes with any flavour combination. It’s naturally fatty and therefore both healthy and easy to prepare because it’s hard to overcook.
  • Tomato: is it a fruit or is it a vegetable? Botanists view it as a fruit, whereas nutritionists view it as a vegetable. Its taste is sweet and sometimes a bit bland, but our chefs use it as a foundation of some of their dishes. Try Peppe Guida’s Polpette di Nonna Rosa.
  • Truffle: naturally these nutty flavoured gems deserve a spot on this list. Truffles taste strong, earthy and are great additions to a dish because they will not overpower other ingredients but add a unique taste to it. Try Dominique Crenn’s Truffle Millefeuille with Mushroom and Truffle Sauce.
  • Fennel: this has a mild liquorice or anise flavour. Added to a dish it adds a sense of sweetness and brings the flavour of spring to your plate.
  • Fermentation: foods or drinks made by microbial growth, converting components through enzymatic actions. Examples include sauerkraut, kombucha, miso, soy sauce, mirin, vinegar, kimchi, and much more. Try Ana Ros’s Tortilla.
