Cauliflower with a Spicy Glaze and Fennel

BY ANDREAS CAMINADA - The cauliflower has been cooked to maintain a bite and is glazed in spice. It meets a smooth emulsion of black garlic, paired with a powerful vegetable essence and some crunchy fennel. An exciting dish with profound taste.

STEPS

  • Place the cauliflower sauce and cauliflower puree in a pot with simmering water (while still in their packaging) and cover with a lid.
  • Place the cauliflower inside the preheated oven (without the lid), for 10 minutes at 180°C, after 5 minutes add the spiced fennel coin in the oven, and leave in for the time left (5 minutes).
  • Take the cauliflower out of the oven.
  • Place the cauliflower into a non-stick pan. Add the Asian ketchup and keep turning it over high heat until it is coated. Once coated, remove the pan from the heat and place the cauliflower on a small plate and leave it to rest.
  • Remove the spiced fennel coin from the oven. Take the cauliflower sauce and cauliflower puree out of the water.
  • Place the hot spiced fennel coin in the centre of a flat plate and top it with the coated cauliflower. Afterwards, place several dots of calamansi gel on top of the cauliflower.
  • Add a full tablespoon of cauliflower sauce at 11 o’clock.
  • Put a generous dot of black garlic cream on the right side, at 4 o’clock. 9. Squeeze a dot of cauliflower puree next to the black garlic cream.
  • COMPONENTS:

    Cauliflower, spiced fennel coin, black garlic cream, cauliflower puree, cauliflower sauce, calamansi gel, Asian ketchup.

    NECESSARY EQUIPMENT:

    Oven, (nonstick) frying pan, pan, 2 spoons, scissors, kitchen tweezers, pot (for hot water).

    PLATE SUGGESTION:

    Flat plate.

    PREPARATION TIME:

    25 minutes.

    OVEN TEMPERATURE:

    180°C
