Glazed Veal Sweetbread with Fennel

BY ANDREAS CAMINADA - The fried and spicy glazed veal sweetbread is accompanied by a smooth emulsion of black garlic, a powerful calfstail essence and crunchy fennel. An umami creation par excellence.

STEPS

  • Place the sweetbread sauce (in its packaging) into a pot with simmering water and cover with a lid.
  • Place the sweetbread box (without the lid) in the oven for 10 minutes at 180°C, after 5 minutes add the spiced fennel coin in the oven, and leave in for the time left (5 minutes).
  • Take the sweetbread out of the oven and place it into a non-stick pan, add the Asian ketchup and keep turning it over high heat until fully coated. Take the spiced fennel coin out of the oven and place it in the centre of the plate. Place the sweetbread on top.
  • Place the fennel salad on the sweetbread and top it with three dots of calamansi gel.
  • Take the sweetbread sauce jar out of the water. Pour three full tablespoons of sweetbread sauce on the right side of the plate, followed by a generous dot of black garlic mayonnaise at 9 o’clock.
  • Place one drop of green oil between the sweetbread sauce and the black garlic mayonnaise.
  • COMPONENTS:

    Sweetbread, spiced fennel coin, fennel salad, green oil, black garlic mayonnaise, Asian ketchup, calamansi gel, sweetbread sauce.

    NECESSARY EQUIPMENT:

    Oven, (nonstick) frying pan, saucepan, spoon, kitchen tweezers, palette knife, scissors, pot (for hot water).

    PLATE SUGGESTION:

    Flat plate.

    PREPARATION TIME:

    20 minutes.

    OVEN TEMPERATURE:

    180°C
