Lamb Shoulder Confit, Black Garlic Puree, Carrots and Herbs Cracker

BY MAURO COLAGRECO - This eye-catching lamb confit with roasted puree and delicious herbs on top is reaching for the stars. A mighty main course that is almost too beautiful to eat.

STEPS

  • Place the roasted carrot puree, black garlic puree and lamb jus (in its packaging) into a pot with simmering water and cover with a lid. Keep the coriander puree at room temperature.
  • Warm a drizzle of olive oil and a small piece of butter in a non-stick pan. Put the lamb in once the butter has melted. Then gently fry each side of the lamb. Once brown, place the lamb in its original box and place it in the pre-heated oven at 160 C for 5 minutes, without lid on.
  • After 5 minutes of cooking, take the lamb out of the oven and place it in the centre of a flat plate.
  • Put a spoonful of green sauce next to the lamb.
  • Cut 1 cm off the end of the puree pockets (black garlic puree, coriander puree and roasted carrot puree), then make 5 dots of each puree on top of the lamb, alternating them.
  • Gently place the tuile on top of the puree dots without crushing them and repeat the process (place 5 dots of each puree, alternating them on the tuile).
  • Place the flower/herb mix creatively on the puree dots.
  • Pour the hot lamb jus on the side, opposite to the green sauce and serve.
  • COMPONENTS:

    Lamb, lamb jus, roasted carrot puree, black garlic puree, coriander puree, flower/herb mix, tuile, green sauce.

    NECESSARY EQUIPMENT:

    Nonstick frying pan, oven, kitchen tweezers, palette knife, spoon, scissors.

    FROM YOUR PANTRY:

    Olive oil, butter.

    PLATE SUGGESTION:

    Flat plate.

    PREPARATION TIME:

    15 minutes.

    OVEN TEMPERATURE:

    160°C
