Ideas for fine dining starters

Planning a gastronomic dinner party usually starts with deciding what kind of menu you want to serve your guests. Today we focus on the entry dish or starter. Often in the shadows of the main course but with an important task: giving them a first impression, and an idea of what kind of culinary journey they can expect from you at one glance. A carefully planned menu makes all the difference.

We believe that if you kick off your fancy fine dining dinner with excellent starters, you are halfway there. Our star chefs put a lot of thought into their starters and how the flavours complement each other and the courses to come. Our MICHELIN star chefs often serve 2-3 starters in their 5-course menus.

At Uqonic Chefs, our starters are either served hot or cold. They are typically lighter than the main course and often contain a lot of vegetables, with some fish or poultry.

Here are some examples of Uqonic Chef’s typical fine dining starters:

  • Mauro Colagreco’s Lotus Flower with Fish Sashimi, Radish and Citrus Broth. This starter has it all: fresh fish, zingy citrus and vegetable broth and umami flavours. A great start to his Signature Menu. For his Green Menu, he replaced the fish with tofu.
  • Dominique Crenn’s Green Menus are a true feast for the senses. Her starters are imaginative and delicious. Our all-time favourite starter is the Beet Chip with Vadouvan Cream. Enjoy beetroot transformed into a crispy beet chip topped with salt-roasted beets dressing in vinaigrette with Vadouvan cream.
  • Peppe Guida’s Signature Menus introduce light starters before 1-2 main courses. Try his Calamari with Peas and Salty Torrone. Based on an ancient Italian fisherman’s recipe with calamari tagliatelle, pureed peas and salty almond sauce.
  • Ana Roš’s 7-course Signature Menu contains 4 starters! It’s hard to pick the best of them, but we know you’ll love the Cured Char. The flavour combination is magnificent and emphasizes the delicate char flavour.
