Tortilla

BY ANA ROŠ - Experience roasted aubergine presented with a mole made of lamb jus finished with spices and chocolate. Everything is served on a tortilla which is a mix of Slovenian corn flour and nixtamalized corn flour.

How to prepare

SERVE HOT

STEPS

  • Preheat the oven to 160°C. Add the aubergine in its packaging (without the lid) for 8 minutes. After 5 minutes, add the tortilla in its packaging (with the tin foil on) for the remaining 3 minutes.
  • Place the salad in a bowl and season it with Fleur de Sel or premium salt and olive oil.
  • Pour water into a small pot and bring to a boil. Once boiled, reduce to a gentle simmer. Add the mole bag and leave it in for 20-30 seconds.
  • Place the tortilla on a flat plate, cut the end of the mole bag and pipe it in the centre of the tortilla.
  • Place the aubergine on top of the mole, using a fork. Cut the end of the mint oil pipette and inject it into the aubergine. Cut the ends of the chimichurri and physalis bags. Pipe the chimichurri on top of the aubergine. Garnish with 4 dots of physalis paste on top of the chimichurri.
  • Gently arrange the salad on top of the aubergine and create height, using two spoons.
  • COMPONENTS:

    Tortilla, aubergine, chimichurri, mint oil, mole, salad, physalis paste, olive oil.

    NECESSARY EQUIPMENT:

    Small bowl, fork, spoon, knife or spatula, scissors, small pot (for hot water).

    FROM YOUR PANTRY:

    Fleur de Sel or premium salt.

    PLATE SUGGESTION:

    Flat plate.

    PREPARATION TIME:

    10 minutes.

    Allergens

    Cellery, milk, soy, hazelnuts, mustard, sulphite, gluten, sesame. All dishes are prepared in kitchens where all of the 14 declared allergens are present and therefore we cannot rule out cross-contamination.

    Good to know

    Best to consume within 24 hours. Please pay attention and store the right items in the fridge. Please note: the precise storage in the fridge must be at max +5°C. The dishes and recipes cannot be changed on request.
