Loin of Dartmoor Venison with Turnip Fondant

BY SIMON HULSTONE - They say the best wild venison is farmed in the rolling hills of Devon across the acres of the moorland. Served with smoky onion ash and apple roulade, this dish has all the attributes of a French classic while using the best Devon has to offer.

How to prepare



  • Heat up a drizzle of oil in a small frying pan on high heat. Pan fry the loin of venison sealing all sides (do not let it burn). Open the sachet of onion ash and place on a plate or small tray, roll the loin of venison in it to cover the whole exterior.
  • Place the haunch croquette and the loin of venison on a tray and put them in the oven for 4 minutes. Now bring a small saucepan with salted water to a boil.
  • Place the apple roulade and turnip on a tray and place in the oven for 5 minutes at 180 C. At the same time, place the pouch of game jus and the tenderstem broccoli into the pan of salted water.
  • Warm up the shallot puree in the same pot of hot water that you used to cook the broccoli, while still in its packaging for 2 minutes.
  • Use a tablespoon to put the shallot puree on the plate.
  • Place the apple roulade and the haunch croquette spaced evenly apart on the plate followed by the turnip fondant.
  • Place the piece of the loin of venison overlapping onto the plate.
  • Place the tenderstem broccoli stem facing upwards on top of the turnip fondant and finish with the game jus. Place one sprig of watercress on top.

    Oven, pan, small saucepan, frying pan, plate or small tray, tablespoon, palette knife, scissors, kitchen tweezers.


    Flat plate.


    20 minutes.
