Tarte Tatin of Caramelized Turnip and Apple

BY SIMON HULSTONE - Try this combination of apple and turnip, made with a Japanese mandolin. It’s carefully rolled out and rolled back up tightly, then cooked with sticky soy caramel. Served with smoky wild mushrooms and a zingy ponzu dressing.

How to prepare

STEPS

  • Place the tarte tatin in the oven for 15 minutes at 180 C. Add the hen of the woods after 5 minutes.
  • Heat the shallot puree in a small saucepan. Do not let it boil.
  • Bring a small pan of salted water to the boil. Place the tenderstem broccoli into the pan for 1 minute (in the packaging), remove from heat and leave to plate later.
  • Remove the tarte tatin from the oven. Cut around the edge of the tart to release from the foil and carefully flip onto the plate (be careful not to burn yourself on any excess caramel).
  • Place the hen of the woods next to the tarte tatin. Then, place the shallot puree onto the plate with a tablespoon.
  • Cut a small hole in the corner of the pouch containing the ponzu dressing and drizzle it around the centre of the plate. Next, take the tenderstem broccoli out of the water and place it facing upwards on top of the tarte tatin.
  • Put a small pinch of the garnish on top of the hen of the woods.
  • COMPONENTS:

    Tarte tatin, shallot puree, ponzu dressing, hen of the woods, garnish, tenderstem broccoli.

    NECESSARY EQUIPMENT:

    Oven, small saucepan, small pan, scissors, palette knife, spoon, kitchen tweezers.

    PLATE SUGGESTION:

    Flat plate.

    PREPARATION TIME:

    20 minutes.

    OVEN TEMPERATURE:

    180°C

    Allergens

    Wheat (gluten), milk, soya, mustard, sesame, sulphite, celery. All dishes are prepared in kitchens where all of the 14 declared allergens are present and therefore we cannot rule out cross-contamination.
