Tarte Tatin of Caramelized Turnip and Apple
BY SIMON HULSTONE - Try this combination of apple and turnip, made with a Japanese mandolin. It’s carefully rolled out and rolled back up tightly, then cooked with sticky soy caramel. Served with smoky wild mushrooms and a zingy ponzu dressing.
How to prepare
Tarte tatin, shallot puree, ponzu dressing, hen of the woods, garnish, tenderstem broccoli.
Oven, small saucepan, small pan, scissors, palette knife, spoon, kitchen tweezers.
