Molecular gastronomy

The origin of molecular gastronomy leads back to Nicholas Kurti and Hervé This, two of the founders and initiators of the International Workshop on Molecular and Physical Gastronomy (Hervé This, 1999). Hervé This stated they "wanted to use science in order to examine culinary processes (…) but also some phenomena that arise when we are eating." This defines molecular gastronomy as culinary transformations and the sensory phenomena associated with eating (This, 2006: p. 3). At one point, Kurti and This were given the opportunity to teach Molecular and Physical Gastronomy at the University of Tours in France (This, 1999: p. 5) and the two performed many experiments that brought physics into the kitchen.

Roughly two decades later, molecular gastronomy has attracted many admirers, and creative chefs are eager to incorporate it into their cuisine. While it may not be something for the everyday cook at home, some MICHELIN Star Chefs, like Spanish chef Ferran Adrià and Grant Achatz from the USA, have brought the art to perfection.
