Hay potato

BY ANA ROŠ - The potato is baked in hay crust with salt, so it gets the flavour of the mountains. It is Ana Roš’ reinterpretation of an old-fashioned dish from the Soča Valley.

How to prepare

SERVE HOT

STEPS

  • Preheat the oven to 160°C. Place the hay potato in the oven in its packaging (without the lid) for 20 minutes.
  • Put the chocolate crumble inside a small bowl or ramekin and scoop the ricotta on top of the chocolate crumble.
  • Take the potato out of the oven and gently break the hay crust using a knife. Place the potato on a small flat plate. (Please note: the hay crust is not edible).
  • COMPONENTS:

    Hay potato, chocolate crumble, ricotta.

    NECESSARY EQUIPMENT:

    Knife, tablespoon.

    PLATE SUGGESTION:

    Small flat plate, small bowl or ramekin.

    PREPARATION TIME:

    25 minutes.

    Allergens

    Egg, milk, nuts, gluten. All dishes are prepared in kitchens where all of the 14 declared allergens are present and therefore we cannot rule out cross-contamination.

    Good to know

    Best to consume within 24 hours. Please pay attention and store the right items in the fridge. Please note: the precise storage in the fridge must be at max +5°C. The dishes and recipes cannot be changed on request.
