Beetroot with a Note of Citrus

BY ANDREAS CAMINADA - This dish revolves around beetroots. They are presented cooked, peeled and marinated raw, but above all, as an intense, dense essence. The citrus notes provide an elegant acidity and freshness. This contrasts nicely with the earthiness and sweetness of the beetroot.

How to prepare

SERVE HOT

STEPS

  • Place the beetroot juice (in its packaging) into a pot with simmering water and cover with a lid.
  • Place the beetroot items (with the lid on) in the preheated oven at 180 C for 10 minutes.
  • Marinate the sliced beetroot with the vinaigrette, make sure that all slices are marinated (you can pour the vinaigrette in the sliced beetroot box and shake the box).
  • Remove the beetroot juice from the hot water. Take the beetroot items out of the oven.
  • Place the hot beetroot items at 12 o’clock, starting with the sliced beet on the bottom, adding the other items on top.
  • Add 3 dots of wasabi mayonnaise and 3 dots of beetroot ketchup on top of the hot beetroot items.
  • Cover the beetroot items with the marinated sliced beetroot starting with the bigger ones.
  • Add 3 dots of calamansi gel on top. Garnish with the bronze-leave fennel on top of the calamansi gel dots.
  • Pour the beetroot sauce on the bottom right of your beetroot stack.
  • COMPONENTS:

    Beetroot juice, beetroot items, sliced beetroot, beetroot ketchup, vinaigrette, calamansi gel, wasabi mayonnaise, bronze-leave fennel.

    NECESSARY EQUIPMENT:

    Pan, oven, spoon, kitchen tweezers, scissors, pot (for hot water).

    PLATE SUGGESTION:

    Deep plate.

    PREPARATION TIME:

    15 minutes.

    OVEN TEMPERATURE:

    180°C

    Allergens

    Sulphites, mustard, milk, celery, egg, barley (gluten), kamut (gluten), oats (gluten), rye (gluten), spelt (gluten), wheat (gluten). All dishes are prepared in kitchens where all of the 14 declared allergens are present and therefore we cannot rule out cross-contamination.
