Golden Potato with Celeriac and Fine Black Truffle

BY ANDREAS CAMINADA - This golden-brown confit potato is accompanied by celeriac and black truffle. The three ingredients form a classic harmony, while the madeira gives the truffle vinaigrette a pleasantly sweet touch.

How to prepare



  • Place the following ingredients in a pot with simmering water (in their packaging and cover with a lid: brown butter sauce, celeriac puree and truffle vinaigrette.
  • Place the potato terrine and celeriac wedge in the oven with the lid on for approximately 15 minutes at 180 C. Make sure to remove the celeriac coins from the box and keep them in the fridge. Place the celeriac coins in the oven with the terrine and wedge for the last 3 minutes.
  • Take the brown butter sauce jar, the celeriac puree, and the truffle vinaigrette out of the hot water.
  • Take the potato terrine and the celeriac coins out of the oven. Gently place the celeriac coins in a circle on top of the potato terrine. Place the potato terrine at 11 o’clock. Place the celeriac wedge at 3 o’clock.
  • Add a generous dot of celeriac puree in the centre of the potato terrine, and another generous dot at 1 o’clock.
  • Garnish the dot on top of the potato terrine with grated black truffle.
  • Pour the truffle vinaigrette between the celeriac wedge and the potato terrine.
  • Shake or stir the brown butter sauce jar before plating it. Pour it next to the vinaigrette.
